Spring 2025 cheese collection!

At Mt. Eitan Cheese we make variety of goat milk cheese and whole Jersey cow's milk cheese.

In our goat milk cheeses you can find our signature Raya cheese that comes in two versions:
reserved Raya that is aged for 12 month, this deeply flavorful cheese has a rich, earthy profile with a sharp finish;
and younger Raya cheese aged between 6-12 months, and has deep earthy flavors;
large wheels of Tome, alpine style hard aged cheese, with a sweeter note.

In the soft ripened  goat cheese family  you can find lactic curd  cheese like the Yael and Moni,

These soft, creamy cheeses are wrapped in a delicate geo rind. Yael offers a creamy, tangy finish,
while Moni is slightly more intense, with a bright, fresh flavor
More in the soft ripened ctatgory are the Gefen, pat-mole corttin style goat cheese,
and Gefen leaf crottin style wrapped in grape leaves, infused with herbal notes from the grape leaves, adding a delightful complexity.
